The perfect introduction for a fall breakfast! This recipe wasn’t a front runner on my “list of foods to make” by any means, but being a broke college student I was looking around my pantry and noticed that I had more quinoa than I needed and the expiration date was sneaking up on me. I’ve made overnight oats before, but recently I’ve noticed overnight quinoa. So that’s how this gem happened! I Pinterested recipes, and stopped on this one because it had “HI I’M FALL” written all over it. The recipe and header image is from a site called Eating Bird Food, however I edited the ingredients slightly by taking out protein powder and not using vanilla extract.
- ¾ cup cooked red or white quinoa
- 1 cup unsweetened almond milk
- 1 Tablespoon chia seeds
- ½ teaspoon cinnamon
- ½ apple, chopped
- 1 Tablespoon maple syrup
- Place all ingredients in a container and stir to combine. Cover and let sit in the fridge at least 2 hours, but preferably overnight.
- Remove from fridge, give the mixture a stir and enjoy!
